Try Lexi’s Fruity Summer Pavlova with Bensons Raspberry & Apple

There are some recipes that come out every summer, and this pavlova is one of Lexi’s favourites for barbecues, parties and family get-togethers.

With a chewy golden meringue, lemony cream, fresh strawberries and plenty of summer berry coulis, it is a brilliant pudding for putting in the middle of the table and letting everyone help themselves. And, of course, there is a little Bensons twist in the coulis.

The Bensons twist

Rather than making the berry coulis with water, Lexi gently simmers frozen summer berries with Bensons Raspberry & Apple Juice.

The combination of raspberry and British apple adds another layer of fruity flavour and works beautifully with the strawberries, lemon curd and creamy topping. It is also a lovely example of how our juices can be used for much more than simply pouring into a glass.

What you’ll need

For the meringue

  • 6 egg whites
  • Golden caster sugar
  • 1 tsp cornflour
  • 1 tsp white wine vinegar

For the summer berry coulis

  • Frozen summer berries
  • Bensons Raspberry & Apple Juice

To finish

  • Double cream
  • Greek yoghurt
  • Lemon curd
  • Fresh strawberries
  • Summer berry coulis

How to make it

Start by whisking the egg whites until they form stiff peaks. Gradually add the golden caster sugar, continuing to whisk until the meringue is thick and glossy.

Gently fold through the cornflour and white wine vinegar, then shape the meringue on a lined baking tray.

Bake at 180°C for 5 minutes, before reducing the temperature to 140°C and baking for around 1 hour and 5 minutes. Once baked, allow the meringue to cool completely.

While it cools, make the coulis by gently simmering the frozen summer berries with a good splash of Bensons Raspberry & Apple Juice until the fruit has softened and the mixture has become deliciously rich and jammy. Leave it to cool before assembling the pavlova.

Whip the double cream, then combine with Greek yoghurt and lemon curd for a fresh, creamy topping.

Spoon generously over the cooled meringue, pile on plenty of fresh strawberries and finish with a generous drizzle of the Bensons summer berry coulis.

Made for summer sharing

This is exactly the sort of pudding we love at Bensons. It looks impressive sitting on the table, but it is relaxed enough for a family barbecue or an afternoon in the garden.

Sweet meringue, sharp lemon, fresh berries and Raspberry & Apple Juice make a combination that tastes properly summery without feeling too heavy after a big meal.
