Sticky Toffee Apple Mince Pies

There’s something special about the smell of toffee, apple and pastry baking on a crisp autumn day. These Sticky Toffee Apple Mince Pies are our cosy Cotswold twist on a Christmas classic. They combine the best bits of a sticky toffee pudding and a traditional mince pie, all wrapped up in buttery pastry with a hint of ginger and spice. Perfect for sharing with friends, gifting to neighbours or enjoying by the fire with a warm drink. 

You’ll need 

  • 400g shortcrust pastry 

  • 85g soft butter 

  • 50g dark muscovado sugar 

  • 75g golden syrup 

  • 40g black treacle 

  • 100g self-raising flour, plus extra for rolling 

  • 2 drops of vanilla extract 

  • 2 medium eggs, at room temperature 

  • 1 ball stem ginger in syrup, drained and finely chopped 

  • 2 tbsp stem ginger syrup 

  • 1 x 411g jar mincemeat 

  • 2 red-skinned English apples, cored and thinly sliced 

Method 

  1. Roll out the pastry on a lightly floured surface, and using a fluted cookie cutter about 9cm in diameter, cut out rounds to line the holes of two 12-hole muffin tins. The pastry should sit just below the rim. Chill for 15 minutes, then preheat the oven to 180°C (fan 160°C/gas 4). 

  1. For the sticky toffee pudding filling, place the soft butter, sugar, golden syrup, treacle, flour, vanilla extract and eggs in a mixer and whisk until smooth. Stir through the finely chopped stem ginger. 

  1. Spoon a little mincemeat into each pastry case, then top with the toffee mixture. Finish with two or three thin apple slices, gently pressing them into the filling. 

  1. Bake for 20 to 25 minutes, until risen and lightly golden. 

  1. Brush or drizzle the warm pies with a little stem ginger syrup before serving.
