Slow Cooked Comfort for Winter Weekends

When the weather settles into that deep winter chill and the fields around the Cotswolds turn frosty, there is nothing quite like a slow-cooked recipe filling the kitchen with warmth. This pulled pork with homemade apple sauce and fennel coleslaw has become a favourite on the Bensons' table, partly because it is easy to make for a crowd and partly because it brings together some of our best-loved ingredients, especially Bensons Cloudy Apple Juice.

The Recipe 

This recipe comes straight from Lexi Benson’s kitchen, and it is the perfect example of how simple ingredients can become something special when they cook low and slow. The pork shoulder is rubbed with Dijon mustard and chilli flakes, then cooked gently with cider vinegar, onions and Bensons Cloudy Apple Juice. The apple sauce is made from Bramley apples, butter and a splash more juice for a fragrant sweetness. The fennel coleslaw brings crunch and freshness, keeping the whole dish beautifully balanced.
