The Recipe: Cotswold Apple Chutney
Ingredients:

750g apples (about 4–5)

1 onion, chopped

250g soft brown sugar

150g raisins

1 tsp mustard seeds

1 tsp ground ginger

¼ tsp chilli flakes

½ tsp salt

350ml cider vinegar
Prep time: 10 mins
Cook time: 35 mins
Method:
Combine all ingredients in a large saucepan. Simmer gently for around 35 minutes, stirring occasionally, until thickened. Pot into warm, sterilised jars and store in a cool place. Flavour deepens after a few weeks — if you can wait that long!
