Bensons Berry Valentines Cocktail Recipe with Homemade Puree

We've put together this delicious recipe, to make together or prepare in advance for arrival of your Valentine!
Many fruity cocktails contain pre-made purees but in this recipe we'll show you how to make your own;
INGREDIENTS:
PUREE
• Two handfuls of frozen red berry mix
• One table spoon squeezed lime
• Two tablespoons of sugar
• Half cup of water
COCKTAIL
• 100ml Gin
• 50ml Cointreau
• 300ml Bensons Apple & Raspberry Juice
• Two tablespoons of sugar
• Half cup of water
GARNISH
• Juice of x2 Limes
• Sugar
• Fresh Raspberries
• Cubed ice
METHOD:
1. Add two handfuls of frozen red berry mix to a saucepan, 1 tablespoon of sugar and cover half-way with tepid water.
2. Cook over a low heat until fruit starts breaking down and then blend together with a hand blender.
3. Add two tablespoons of the fresh lime juice and one tablespoon of sugar (or more to your tastes) and mix together. Put aside or in the fridge until cool.
4. Add 100ml Gin, 50ml Cointreau, two dessert spoons of the puree, 300ml Bensons Raspberry & Apple Juice and ice to a cocktail shaker... and shake!
5. Garnish the glass by dipping the edge of the glass in the lime juice and roll into the remaining sugar.
6. Pour the Cocktail into the glasses, add fresh Raspberries and enjoy!
