Homemade Apple Pancakes

Serves 4

  • 1 ½ cups all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3 Tbsp sugar
  • 1/4 tsp nutmeg
  • 1/3 tsp baking soda
  • 1 egg
  • 3 Tbsp butter, melted
  • 1/4 tsp vanilla
  • 1 cup milk
  • 1 cup grated apples

 

  1. In a large bowl, combine the flour, baking powder, salt, sugar, and nutmeg.
  2. In a separate bowl, beat together the baking soda, egg, butter, vanilla, and milk.
  3. Add the milk and egg mixture into the dry ingredients, stirring only until blended, then gently fold in the grated apple.
  4. Spoon batter onto a pre-heated and lightly greased griddle or frying pan, cooking for 2-3 minutes on each side until golden brown.
